- 3/4 cup peeled, diced apple (like Granny Smith or pink lady)
- 1 cup roughly peeled, finely diced seedless cucumber
- 1/4 cup minced radish
- 1/2 cup minced fresh mint leaves
- 2 Tbsp minced chives (use scissors)
- 3 Tbsp lemon juice
- 1/2 tsp salt
- 1 tsp honey
