Apple Radish Salsa

Refreshing and sophisticated, this light, aromatic salsa is a colorful and nutritious addition to any summer soup, snack, or meal.

Prep Time: 15 Minutes


  • 3/4 cup peeled, diced apple (like Granny Smith or pink lady)
  • 1 cup roughly peeled, finely diced seedless cucumber
  • 1/4 cup minced radish
  • 1/2 cup minced fresh mint leaves
  • 2 Tbsp minced chives (use scissors)
  • 3 Tbsp lemon juice
  • 1/2 tsp salt
  • 1 tsp honey


Procedure: Combine all the ingredients in a 1-quart bowl and chill until needed.
